This smoothie is beautifully sweet and fruity, with a real refreshing kick thanks to lemon juice and mint leaves. It makes a nice little afternoon pick-me-up if you’re trying to give coffee a miss. Simply blitz the ingredients together in a blender and you’re good to go.
Makes 2 glasses
- 150g blueberries
- 150g strawberries
- 1 large banana (frozen helps to thicken)
- 200ml fresh pressed apple juice
- Juice of half a lemon
- A handful of fresh mint leaves
